It may sound daft but have you looked at government, military or police websites / reports etc. Is there a national statistics office? Depending on how accurate you want the stats to be try talking to someone involved in the media either as a reporter or researcher? Talking to someone from your local papers may point you in a better direction maybe? It's worked for me in the past when i didnt know where else to turn.

The Home Office publishes the National Crime Statistics on it's website. You can obtain the report in PDF format and it has a section on violent crime, which drills down to include gun crime and subsequently edged weapons.

More specific knife crime statistics can be obtained through your local Constabulary, either through their website or upon request if you have a contact. I have received very useful data from both The Met and The Hertfordshire Police over recent years.
